We also wanted to make sure that we had a specific amount of THC in each brownie, that would be evenly incorporated, with fast-acting THC. After serving these in the bakery for years and watching them get devoured at some of our other restaurants in brownie sundaes, we wanted to make sure that people could indulge with more than one brownie without the risk of getting too "baked".
West Town Bakery's Cannfetti Cake (or cupcakes)
INGREDIENTS:
1 Cannfetti Mix Packet
3/4 cup of Oil (canola or vegetable)
1 1/4 cup Soymilk
1 teaspoon vinegar
1 quart of West Town Bakery Vegan Frosting or Frosting of Your Choice
Directions for Cake

Preheat to 350°F
Spray or grease the included foil pan.
In a large bowl, empty the contents of the (dry) CannFetti Mix Packet.
In a separate bowl, combine the Oil, Vinegar, and Soy Milk. Mix well.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Pour the batter into the greased foil pan.
Bake in the pre-heated oven on the middle rack for 40-45 minutes until you can insert a toothpick in the center that comes out clean.
Allow the cake to cool completely to room temperature prior to adding frosting or cutting.
Directions for Cupcakes
Preheat to 350°F
In a large bowl, empty the contents of the (dry) Cannfetti Mix Packet.
In a separate bowl, combine the Oil, Vinegar, and Soy Milk. Mix well.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Pour the batter into 12 lined muffin tins, filling 2/3 full.
Bake in the pre-heated oven on the middle rack for 22-25 minutes until you can insert a toothpick in the center that comes out clean.
Allow the cake to cool completely to room temperature prior to adding frosting.
